Grass-fed Beef Recipes

Grass-fed Meat Loaf Like Beverly Makes
This
recipe was the special request birthday supper for our son on his 5th
and 6th birthdays. You know it is good when it wins out over all the
other kid fare!
3/4 cup ketchup, divided
1/4 cup minced fresh onion
1 Tbs. dried parsley
1 Tbs. brown sugar
1/4 tsp. salt
1/4 tsp. pepper
2 large egg whites
1 1/2 - 2 pounds Double R Cattle Services grass-fed ground beef
1/2 cup quick cooking oats
Non-stick spray
Preheat oven to 350o.
Combine
1/2 cup ketchup, onion, parsley, brown sugar, salt, pepper, and egg
whites in a large bowl. Stir well. Add meat and oats. Stir until just
blended. Shape mixture into an 8 x 4-inch loaf on a broiler pan coated
with non-stick spray. Brush remaining 1/4 cup ketchup over meatloaf.
Bake at 350o for 1 hour and 10 minutes or until done. Let stand 10 minutes before slicing. Serves 6.
Grass-fed Beef Fajitas for Two
This
is a favorite "go-to" meal when we know we need a quick supper. All the
prep is done ahead of time and waiting for when we are ready to cook.
1/2 cup oil
1/2 cup water
1 Tbs. prepared fajita seasoning (in the spice aisle)
1 Tbs. worcestershire sauce
1 pkg. of Double R Cattle Services grass-fed cube steak, sliced thin
Peppers and onions (fresh or frozen)*, sliced thin
Tortillas
Mix
oil, water, seasoning, and worcestershire sauce in a zip-top bag. Add
meat. Squeeze the air out and massage the meat around a little. Allow to
marinate for several hours.
In
a separate bag, mix a small amount of oil with a couple of shakes of
fajita seasoning. Add peppers and onion. Allow to rest for several
hours.
Heat a large
skillet over medium heat. Add meat and saute until almost done. Add
peppers and cook until meat and veggies are done. Discard marinades.
Serve with tortillas and condiments of your choice.
* amount of peppers and onions is up to you. You could also put in other veggies like squash or zucchini.
Kids Chili
Ritchie
calls this "Meat and Beans" because there is not much spice to it. You
could easily increase the spice to make it more grown-up.
1 pound Double R Cattle Services grass-fed ground beef
1/2 large sweet onion, chopped
1 tsp. chili powder
1/2 tsp. ground cumin
1 tsp. salt
1/2 tsp. pepper
2 cups diced tomato
28 ounces kidney beans
Cook
ground beef and onion in a dutch oven (or other large pot) until beef
is brown and onion has softened. Add spices and stir. Mix in tomatoes
and beans. Allow to simmer for at least an hour to let the flavors
blend.
Serve plain with crackers or top with cheese, sour cream, or more onions.
